Ingredients
- Sponge Cake
- 1 cup (225g) sugar
- 125g unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups (225g) self-rising flour
- ½ cup (125ml) milk
- Chocolate Icing
- 3 cups (360g) powdered sugar
- ⅓ cup (40g) cocoa powder
- ¾ cup (185ml) milk
- 1 tablespoon unsalted butter, melted
- Coating
- 2 cups (160g) desiccated coconut
Instructions
- Prepare the Cake: Preheat the oven to 180°C (350°F). Grease and line a 20x20cm baking pan. Beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well, then add vanilla. Alternate adding flour and milk, beginning and ending with flour.
- Bake: Pour batter into the pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow the cake to cool, then cut into 16 squares.
- Make the Icing: In a bowl, sift powdered sugar and cocoa. Add milk and melted butter, whisking until smooth.
- Assemble: Dip each square in chocolate icing, then roll in desiccated coconut until fully coated. Place on a wire rack to set.
