Ingredients:
- 6 large eggs
- 2 cups frozen hash browns, thawed and drained
- 1 cup cooked bacon, chopped
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1 cup fresh spinach, roughly chopped
- 1 small onion, finely chopped
- 1 tbsp olive oil
- 1/4 cup milk
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp black pepper
- Salt to taste
Directions:
- Prepare the ingredients: Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 2-3 minutes until soft and translucent. Add the spinach and cook for another 1-2 minutes until wilted. Remove the spinach mixture from the skillet and set aside.
- Cook the bacon: In the same skillet, cook the bacon over medium heat until crispy. Once done, remove and place on paper towels to drain excess fat. Once cooled, chop into small pieces.
