Classic Meatloaf

Ingredients:

  • 1 lb (450g) ground beef – Use 80/20 ground beef for the best balance of flavor and moisture.
  • 1 small onion, finely chopped – Adds a nice texture and flavor to the meatloaf.
  • 1 egg – Helps bind the ingredients together.
  • 1 cup breadcrumbs – Regular or panko breadcrumbs work; this ingredient helps absorb moisture.
  • 1/2 cup ketchup – Adds sweetness and moisture to the meatloaf mixture.
  • 1 tablespoon Worcestershire sauce – Adds depth and umami to the flavor.
  • 1/2 teaspoon garlic powder – Enhances the savory flavor.
  • 1/2 teaspoon salt – To season the meatloaf.
  • 1/4 teaspoon black pepper – Adds a subtle kick to balance the flavors.
  • 1/4 cup milk – Adds moisture to keep the meatloaf juicy.
  • 1/2 cup ketchup (extra for topping) – Creates a sweet, tangy glaze on top.

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper if shaping the meatloaf by hand.
  2. Prepare the Meatloaf Mixture:
    In a large mixing bowl, combine the ground beef, finely chopped onion, egg, breadcrumbs, 1/2 cup ketchup, Worcestershire sauce, garlic powder, salt, pepper, and milk. Mix gently using your hands or a wooden spoon until all ingredients are just combined. Be careful not to overmix, as this can make the meatloaf tough.
  3. Shape the Meatloaf:
    If using a loaf pan, press the meatloaf mixture into the pan evenly. If shaping by hand, form the mixture into a loaf shape and place it on a prepared baking sheet.
  4. Add the Glaze:
    Spread the remaining 1/2 cup of ketchup evenly over the top of the meatloaf to create a glaze. You can also mix the ketchup with a bit of Worcestershire sauce or brown sugar for extra flavor.
  5. Bake:
    Place the meatloaf in the preheated oven and bake for about 50 to 60 minutes. Use a meat thermometer to check that the internal temperature has reached 160°F (71°C) to ensure it’s fully cooked. The meatloaf should be golden brown with a glossy ketchup glaze.
  6. Rest and Serve:
    Once baked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps retain the juices and makes slicing easier. Serve warm with mashed potatoes or steamed vegetables.
