Ingredients:

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup (80g) melted butter
  • 1 teaspoon baking soda
  • A pinch of salt
  • 3/4 cup (150g) sugar (can reduce to 1/2 cup for less sweetness)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C). Butter a 4×8-inch loaf pan.
  2. Mash the bananas in a mixing bowl with a fork until smooth. Stir the melted butter into the mashed bananas.
  3. Mix the dry ingredients: Add the baking soda and salt to the banana-butter mixture and stir to combine.
  4. Add the sugar, egg, and vanilla: Mix in the sugar, beaten egg, and vanilla extract.
  5. Add the flour: Stir in the flour until fully incorporated. Be careful not to overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and serve: Let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
